As with their full-sized apple cousins, the fruits of different crab apple trees come into maturity from late summer to mid-fall, offering a huge window for crab apple experimentation.

Plan to process or cook them not too long after harvesting. Think crab apple jelly, or toss a handful in with apples you’re cooking down into applesauce.
